Very easy and kid friendly! You can top these cupcakes with the ingredients mentioned, or be creative and come up with your own!

SERVES 16 (change servings and units)

Ingredients

    Preheat oven to 350.
  2. 2
    Line muffin pans with cupcake papers.
  3. 3
    Place one wafer cookie on the bottom of each cupcake paper.
  4. 4
    In a medium bowl, cream together cream cheese and sugar.
  5. 5
    Beat in eggs and vanilla until smooth.
  6. 6
    Pour over wafers in cupcake papers.
  7. 7
    Bake for 15 minutes or until set.
  8. 8
    Cool.
  9. 9
    Top with chocolate chips, caramel sauce, or fruit pie filling of your choice.

so easy and so good! i made mine plain since my family said they didn't want anything on top of it. i couldn't find cupcake liners small enough do i had to do it w/ out and it stuck to the bottom of the pans. i can't wait to make these again when i find those small cupcake liners!

    I used lo fat cream cheese and these FLEW off the buffet table. I topped with magic shell and a few white chocolate chips. This works very well for a crowd.

    These are GREAT they are TOO YUMMY !! I made deserts for my bosses Christmas dinner and this was 1 of 3. They kept well , as I made them 3 days prior. But I think next time I make these( and there will be many ! As this is so easy and so GOOD!)I will bake them in metal liners and break up the wafers to cover the bottom or line bottoms with chocolate. I do have to say they are GREAT, the way they are if you follow the recipe. Thanks for sharing!
