Want cheesecake but not the hassel of preparing one? Try this simple and delicious alternative : )

    Heat oven to 350.
  2. 2
    In a medium bowl blend thoroughly butter, brown sugar and flour with a fork until mixture resembles coarse crumbs.

    Put 1 cup of the mixture aside for topping.
  4. 4
    Press remaining mixture into an 8x8x2 inch baking dish sprayed lightly with cooking spray; bake for 15 minutes.

    In another bowl combine sugar and cream cheese, mixing until smooth.

    Thoroughly beat in egg, milk, lemon juice and vanilla.
  7. 7
    Spread over the baked crust and sprinkle with remaining brown sugar mixture.

    Bake for 25 minutes.

    Let cool, then chill for at least 1 hour.

    Cut into 16 squares; serve.

AMAZING! I made the following alerations: Added 1/4 cup sweetened shredded coconut, 1/4 finely chopped walnuts, and 1 tsp special dark cocoa powder to the crust/topping mix. Added 1/4 coarsely chopped special dark chocolate chips to the baked crust before pouring cheesecake mix into crust.

    Quick and easy and tastes just like a hard made cheesecake. I made them for my DBF's son's wedding rehearsal dinner and they were inhaled. Make sure you cool them completely before you cut them because they can come out a little messy. Thanks!

    100 stars! I am not a cheesecake fan mainly because I don't care for the richness of the cream cheese - my husband is a huge cheesecake lover - these are just perfect little "bites" that satisfy both of us - AND he can have as many as he likes! Changes I made were: lemon zest and sour cream (1/4 cup) - for the crust I added 1/4 cup oats and coconut for texture. I served the squares with strawberry sauce and whipped cream. By the way - they freeze very well. Thanks for a wonderful recipe!

    Awesome and easy! Thank you so much for posting this recipe. I topped the cookies with cherry pie filling (from a can) to look just like yours.A tip, cut the cookies BEFORE adding the toppings.When I cut,it came out looking a little messy-but tasted deeelicious! Used lime juice instead of lemon- came out great!
