Cheeseburger Soup

When I first read the words "Cheeseburger Soup" on the menu of our local deli - my thought was YUCK! This was the special every Friday! Well one Friday I decided to broaden my taste buds and give it a try! It was sooooo good! Being the cook that I am, I just knew I could make this on my own. So here is my version and If I do say so myself - "it's better than the deli's" but shhhh....don't tell them!!!!!

SERVES 10 -12 (change servings and units)

Ingredients

    In a large pot, brown ground beef and onion.
  2. 2
    Add broth, celery, carrots, parsley and potatoes.
  3. 3
    Bring to a boil, and then simmer until potatoes are tender, about 10-12 minutes.

    In a saucepan, melt the butter and stir in flour.
  5. 5
    Add the milk, stirring until smooth.
  6. 6
    Gradually add milk mixture to the soup, stirring constantly.
  7. 7
    Bring to a boil and reduce heat to simmer.
  8. 8
    Stir in cheese; continue to stir until cheese is melted then serve.

    Do not boil.

My 17 year old son came home from school starving as always. With the exception of a bowlful my daughter ate, he devoured the entire pot on his own. Needless to say he loved this soup and asked me to make more right away. Thanks for a hit in my house.

    Great recipe and easy to adapt! I didn't have cheddar but had some velvetta and it made a smooth, creamy soup that my husband loved! Added the cayenne just to give a little kick since the velvetta can be bland. Good hearty recipe for a cool, winter day!

    This was great. My 5 year old even ate 2 bowls. I did add a can of Rotel and replaced some of the cheddar with Monterrey Jack cheese with Jalepenos. We like spicy food. It was so good my DH volunteered to bring some to work today for lunch. AMAZING!!

    My family isn't big on soup (they're weird lol), but I had to try this recipe. I just cut back on the liquid and served it as a casserole. It turned out to be a very tasty stick-to-your-ribs meal.
