Cheeseburger Mini Muffins

You can enjoy the delicious taste of a cheeseburger without having to resort to fast food. These little appetizers are the perfect 'finger food' and can be frozen after baking. (cook time reflected is for two batches; add 15 minutes for each additional batch)

Directions

    Preheat oven to 425 degrees.

    In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
  3. 3
    In a mixing bowl, combine flour, sugar, baking powder and salt.
  4. 4
    In another bowl combine ketchup, milk, butter, eggs and mustard.
  5. 5
    Stir into the dry ingredients just until moistened.
  6. 6
    Fold in the beef mixture and shredded cheese.
  7. 7
    Fill greased miniature muffin cups three-fourths full.

    Bake for 15-18 minutes or until a toothpick inserted in the center of a muffin comes out clean.

    Cool for 5 minutes before removing from pan to wire rack.

    Refrigerate leftovers.

These are really tasty. I agree though that next time I will add more mustard or a stronger mustard. I used a mild American mustard. Will definitely be freezing some of these for lunchboxes. I cooked my in my muffin maker which is simular to a pie maker.

    These were really good. Perfectly sized for nibbling or for lunchboxes! I love the fact that this recipe doesn't use a lot of processed foods. I used a nice aged cheddar, and it gave them a little tang. I also mixed up some mustard and ketchup for a quick yummy dipping sauce. Thanks for posting.

    I wanted to do a "trial run" before serving these at a party. Followed the recipe exactly. We enjoyed these very much, but next time I will increase the ketchup to 1 cup because we like a more pronounced "ketchupy" taste. Also, we liked these minis warm, so I will put them on a warming tray at the party. Thank you for a great addition to my appetizer collection.

    These are absolutely a wonderful and tasty finger food. I made these a few weeks ago when this recipe was first posted at a request. They taste as great frozen as they do when baked fresh. I love coming up with a new appetizer as we seem to have a small circle of friends that we entertain all the time and, of course, you like something new. Many thanks for posting this easy recipe.
