Cheese Croquettes from Brazil (Croquettes De Queijo)

These are famous snacks in Brazil and are often served any time of day. They're usually served with salsa.

SERVES 4 , 12 croquettes (change servings and units)

Ingredients

2 ounces butter, cubed
2/3 cup flour
1 egg, separated
1/4 cup breadcrumbs
1/4 cup parmesan cheese or any hard cheese, grated
salt and pepper, as needed
1 tablespoon water or water, as needed
chili, salsa for serving

Directions

Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.

Rub butter into flour until it gives a coarse mixture.

Add egg yolk, breadcrumbs, parmesan cheese, salt and pepper, and water, and mix together. Add a tablespoon of water if you find them difficult to bind.

Shape dough into golf ball size.

Dip into slightly beaten egg white.

Place in a well oiled baking sheet and bake in the oven for 25 minutes or until brown and crispy.

Invert the balls as well baking this time for 5 minutes or until brown and crispy too.

Serve warm with chili salsa.

Very good! So easy! I used marinara sauce to dip them in, which went great with the parm cheese. These would be great to serve at a party Made for PAC spring 09.

I loved these either alone or with a roasted salsa side (what I used). BF said at first that these were "pretty good" then he asked for more but I couldn't give him more since I made only half a recipe. He was visibly disappointed. I used lite butter (about half calories and fat), otherwise no changes (1/2 egg was sort of iffy, I broke the yoke:D) These really were easy! I needed 4 tsps. water to hold the dough, and at a 350 Fahrenheit (180C) oven these snacks turned out great in 30 minutes! Actually, these were a starch side to a meal of substitute meat and a lettuce salad. I had a parmesan/bread crumb mixture instead of the breadcrumbs alone, plus parmesan shreds. I made 6 golf ball size balls, they turned out beautifully I agree, these would be good paired with a veggie soup for a hearty meal. Thanks M!

These little croquettes are very good. I prepared them as written and used 1 tbsp of water to hold them together. I also used parmesan that was pregrated. Next time I may try grating the cheese myself before preparing. THey were served with chili salsa as recommended.
