Cheeeesy Lasagna Soup

Cheesy YUMMY lasagna soup recipe given to me by Mary Christen at my Bridal Shower! SO GOOD!!!!!!!!!!!!!!

SERVES 6 (change servings and units)

Ingredients

Directions

    Cook, beef, onion and garlic in dutch oven over medium heat until beef is browned and onion is tender.

    Drain.
  3. 3
    Stir in water, diced tomatoes and tomato paste until blended.
  4. 4
    Stir in remaining ingredients except croutons and cheese.
  5. 5
    Heat to boiling then reduce heat.
  6. 6
    Cover and simmer about 10 minutes until pasta is tender.

    Set oven to broil.
  8. 8
    Pour hot soup into 6 oven-proof soup bowls or casseroles.
  9. 9
    Top each with 1/4 cup croutons.
  10. 10
    Sprinkle with cheese.

    Broil soup with tops 3 to 4 inches from heat 1-2 minutes or until cheese is melted.

This was good and easy to make. I followed the recipe as written other then I didn't have mafalda pasta, so I used bow tie pasta like others. I also didn't add the croutons as I didn't have any. We did think it could use more flavor so I added four bouillon cubes and a bit of salt.

    This was delicious soup. I added some green peppers to it and instead of the 2 cans of tomato, I subbed 1 for a jar of pasta sauce and it worked out just fine. I also didn't use the croutons b/cuz we had garlic bread . Oh one more thing...I wanted a thicker soup so I cooked mine longer so that the pasta soaked up most of the sauce. It was great! My kids asked to make it again. Thank for a recipe that tastes like Lasagna without all the hard work of real Lasagna

    I used 1 can of stewed tomatoes w/oil & garlic since we only had 1 diced in the pantry. I didn't add croutons & instead of broiling, I just melted cheese on top in the microwave. My DH liked his with some spicy pizza seasoning added. it was tasty! Thanks! WOW! I AM ADDING ON TO MY ORIGINAL REVIEW - I just made it by adding pepperoni and about 1/2 cup of cottage cheese and it truly does taste like lasagna! THANKS!

    This was a wonderful recipe. I wasn't able to do the croutons. I place between 1/4 and 1/3 cup of the mozzarella in each soup dish and then placed the soup over the cheese. I will use this recipe many times in the future. Thank you for sharing this recipe.
