Cheddar Potatoes and Onions

From the October 1996 Cooking Light, these easy potatoes are a family favorite.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 350ºF.

    Pierce potatoes with a fork; arrange on paper towels in microwave oven.
  3. 3
    Microwave at HIGH for 5 to 6 minutes, turning once.

    Let stand 1 minute.

    Cut potatoes lengthwise into quarters.
  6. 6
    Place potatoes and onion wedges in an 8-inch square baking pan coated with cooking spray.

    Lightly coat tops of vegetables with cooking spray, and sprinkle evenly with lemon pepper and salt.

    Bake at 350ºF for 30 minutes.

    Sprinkle with cheese; cook an additional 3 minutes or until cheese melts.

I used yellow potatoes and cooked them in my steamer machine. This is very simple and easy to do. And it was great with the cheese Thanks Lazyme. Made for Zaar Star Game

    What a great combination of different ingredients in this one! My DH gets sick of tatoes the same old way all the time, so this was a nice surprise with him and I really loved them too! This is now in our favorites to have again soon!

    I just love to use the microwave and shorten the cooking time and this worked out great!!! I cut the recipe to serve one, as I was having a salad and these yummy potatoes for lunch. Thanks for sharing another great recipe!!!! Made for potluck tag.

    We loved this! It was easy to prepare and took no time at all, plus you have the added bonus of taste. Made as posted except cut it down to serve just 2. This is a keeper. Thanks lazyme for posting.
