Cheating Scalloped Potatoes

I know puritans will scream "You can't do this, It's not right etc. etc." But if you are in a hurry and want delicious scalloped potatoes take this shortcut. If you wish you can put some cheddar cheese on top for the last 15 min and add a few extra mushrooms

SERVES 10 (change servings and units)

Ingredients

    In a bowl mix the soup, milk, salt and pepper; set aside.
  2. 2
    Grease a 13"x9"x2" oven proof dish.
  3. 3
    Put 1/3 of the potatoes, 1/3 of the onions, 1/3 butter, 1/3 flour and a 1/3 of the soup mixture in the greased dish (take a minute to arrange them evenly).

    Repeat with 2 more layers ending with the soup mixture.
  5. 5
    Bake uncovered at 350F degrees for 1 and 1/2 hours or until potatoes are done and golden.

I was skeptical because I hate cream of mushroom soup. I added parmesan cheese on the layers and shredded mozzaralla on top. It was pretty good. My husband and kids loved it.

    Ah-mayyyyzing! I made these this last Sunday for a church potluck; I actually had no other ingredients in the house to make anything else! But as it turns out these are pretty much the best potatoes I've ever made. I didn't get to taste near enough of them at the church function, so I am making them again tonight for supper. BTW using a food processor to slice the potatoes (and onion, actually!) super thin works wonderfully well.

    This was really good Bergy! I have to admit, I added a lot of cheese on top, so it became Scalloped/Au Gratin! Thanks for a great recipe!
