Cheap Beef in Potato Nests

Here is an inexpensive quick supper! When we were kids my mom used to serve the tomato soup version of this recipe...We called it SOS and would make "volcanoes" out of this dish. Maybe she should have renamed it "Stopplayingwith yourfood,dammit!"

SERVES 4 (change servings and units)

Ingredients

    Place potatoes in a med.
  2. 2
    sauce pan with just enough water to cover.
  3. 3
    Simmer until tender.
  4. 4
    Heat oil in fry pan.
  5. 5
    Saute onion and pepper in oil.
  6. 6
    Add ground beef and brown well.
  7. 7
    Add tomato soup (or BBQ sauce) to meat mixture.
  8. 8
    Heat through.
  9. 9
    Drain, mash potatoes.
  10. 10
    Add enough milk to moisten and mash again.
  11. 11
    Season to taste.

    Divide potatoes equally onto four serving plates.
  13. 13
    Make an indentation in the middle of each mound; fill with beef mixture.

    Top with green chopped green onion and a sprinkle of cheddar cheese.

    I thought this was really good. Not really flavorful but good for a quick meal. I used the tomato soup, left out the green pepper and added a squirt or two of barbecue sauce. I also threw in alot of pepper, some season salt and Italian seasoning. I'll be keeping this recipe on hand for nights like tonight when everyone is hungry and I have no time.

    Definitely 5 star for what I was looking for. Something cheap, easy and tasty. I was surprised it was that good, it looked very nice with the shredded cheddar and scallions. Filling to say the least. Good with a bit of sour cream on top also. Thanks.

    This was very good!! I used barbecue sauce and it made 8 servings and there were no leftovers. My daughter had 3 helpings. Everyone loved it!Thank you Barbara for this recipe ; )
