Chai Oatmeal

This is an adaptation of a recipe that was published in our local paper. My daughter and I like it so much I have made a large batch of the spice mix to simplify our breakfast routine. Anyone who likes Indian food will probably enjoy this for a change.

SERVES 2 -3 (change servings and units)

Ingredients

Optional

  • sometimes i add finely diced dried fruit, like apricots (optional) or cranberries (optional) or raisins (optional) or sometimes i add toasted chopped walnuts (optional) or almonds, after cooking depending on my mood and what is on hand (optional)

Directions

    Combine oatmeal and flavourings in a deep, microwave safe bowl.
  2. 2
    Add milk and stir to combine.
  3. 3
    Cook on high power for 2 minutes, then stir.
  4. 4
    Continue cooking and stirring at one minute intervals until the oatmeal is as thick as you like.

    Top with favourite toppings. I like plain yogurt and a touch of maple syrup.

This was interesting! I have been experimenting with Chai spices, though I don't drink tea. I used cloves instead of the allspice, and went easy on the tumeric. I also added dried apples. I liked the blend of spices and will make a double batch next time.

    I found this to be a little bland for my tastes, but I omitted the honey. I think dried fruit would be a worthwhile addition.

    I'm so glad you posted this. This made a wonderful breakfast indeed. I added a pinch of ginger and a little vanilla. And I would agree, the turmeric is a must. The color is wonderful. I set out chopped nuts and dried fruits so everyone could make their bowl how they wished. It was a hit. Thank you a million! P.S. It works just as well on the stove top...and just as quick.

    DH certainly got something a little different this morning... he enjoyed it though! Mine was nice and yellow from the turmeric, and beautifully spicy, I added a healthy dollop of plain yoghurt and drizzled it with a good tablespoon of honey, next time I can try adding fruit and such. DH approached it gingerly, but said it was jolly good! Certainly very easy to make, taking hardly any more time than the time it would take me to put together his usual muesli and fruit.
