Celery Cream Soup

Imagine the aroma of home made cream of celery soup simmering on the stove. Simple, easy and rich in flavor.

SERVES 6 (change servings and units)

Ingredients

Directions

    In a large sauce pan, melt butter, add celery, onions, and garlic.
  2. 2
    Cook over medium low heat until soft.
  3. 3
    Add flour and cook 1-2 minutes over low heat.
  4. 4
    Add chicken broth and bay leaf, bring to a boil reduce heat, cover and simmer 30 minutes.

    Remove bay leaf, puree (in small batches) in a blender or processor.
  6. 6
    Add cream, lemon juice, hot sauce, salt and pepper.
  7. 7
    Reheat and simmer 5 minutes.
  8. 8
    Garnish with celery leaves.

I thought I had already rated this soup - my mistake! I guess I was in a trance after having this for supper. This soup is excellent. I love the fact that if you want to spice it up a little you can. I like it just as it is - thank you for the recipe, Lorac

    I'm afraid I didn't love this as much as other reviewers. I found it quite bland. I wish I knew how I could have made it more flavorful. I'm not yet an experienced enough cook to know what herbs or spices could have been added.

    OUTSTANDING! INCREDIBLE! DELICIOUS! I had never heard of this kind of soup until my husband devoured a bowl at a restaurant. So I went on a search and I found this recipe-I'm my husbands new hero. We both loved this soup. It was one of the easiest soups i've ever made. I wasn't sure how much 1 1/2lbs of celery was, so i used an entire bunch of celery. i also used table cream (18%M.F.) and loved the result! This has become a favorite soup of mine! I can't wait for the fall weather to come to enjoy another bowl of this tasty soup. Thank you sooo much for posting!

    This is the most delicious celery soup I've ever tasted. Even my husband who doesn't really like celery loved it because it doesn't have an overpowering celery flavour. The addition of hot sauce at the end gave it a nice little kick.This is one I will definetly mke regularly.
