Cauliflower Cheddar Fritters

Crispy cheese-filled fritters with mild cauliflower and onion flavors. Easy to make and to-die-for delicious! My 3 year old loves to dip 'em in ketchup.

8 -10 side dish servings (change servings and units)

Directions

    Make a smooth batter with first 7 ingredients.

    Mix in next 3 ingredients.
  3. 3
    For best results, refrigerate for an hour or so (but not necessary).

    Drop by spoonfulls into hot oil and deep fry til brown and crispy.
  5. 5
    Sprinkle with salt immediately upon removing from oil.

I love veggies and this is a great creation for them. Great with ketchup. I added more milk because the batter seemed just to thick. Also next time I will add some hot spices, give it some pep!

    These turned out great. I didn't use the onion or cheese because I just wasn't sure about it and my hubby can't handle onion in the evening. We both enjoyed them very much and I will def. try the onion and cheese next time. Thanks for posting.

    These were really yummy...however I baked them in a 425 degree oven for about 12 min and they were quite tasty (my parents are on a diet, fried foods are supposed to be out of it), but these were still great, and I felt good getting in some more veggies!!!

    Wow these are good! I tried baking them - I do NOT suggest this. But, with my leftovers, I fried them up and the flavor improved so much! I think these would be very good with crumbled bits of bacon in them, and I might carmalize the onions in advance next time. Thanks for posting, I have been searching for a recipe like this for a long time!
