Cauliflower Casserole

cauliflower in a great sauce.

SERVES 6 (change servings and units)

Ingredients

Directions

    Put cauliflower in saucepan, add 1 cup water, cover and cook on med for 8 minutes.

    Drain.
  3. 3
    Mix cauliflower with sour cream, cheddar cheese, crumbs, pepper, onions, and salt.
  4. 4
    Put in greased 2qt casserole.
  5. 5
    Sprinkle with parmesan.
  6. 6
    Bake, uncovered at 325* for 30 minutes.

This worked really well! DH is diabetic so it was an excellent side dish to help with my potato craving. =) I used frozen cauli, sharp cheddar cheese, green onion, and skipped the green pepper. I know it's a lot of changes, but it worked great for us. Thank you for sharing!

    First of all this is another very good recipe from MizzNezz. Second, I had to make a couple of substitutions,I didn't have the cornflakes so I used the same amount of crushed butter flavor type crackers. I used red onion instead of white,and no green peppers,(the peppers "talk back to me "And I used a blend of grated Parmesan and Romano for the top.While it was in the oven,the smell was just wonderful.And the cooking time was right on the money. I'm normally a non-cauliflower eating person,but after eating this not anymore. This will be made again,Thank you for posting. "Keep Smiling "

    I would give more stars if the elves would let me. This tastes so good, and it was so easy to preapare. I steamed the cauliflower and used light sour cream, and fat-free cheddar cheese which worked out super! The taste of this dish is full of flavor, and so creamy. I think I will use this recipe for Thanksgiving this year. Thanks MizzNezz for sharing your fabulous recipe.
