So simply delicious! If you like salt with your chocolate, use salted cashews. If you would prefer, use unsalted cashews. Adapted from the QVC website.

2 cups (change servings and units)

Ingredients

  • 1 (12 ounce) package semi-sweet chocolate chips

  • 1 ounce unsweetened chocolate
  • 2 cups roasted cashews (whatever size you like)

Directions

  1. 1
Line a cookie sheet with waxed paper.
  2. 2
In a large saucepan, melt the chocolate chips and unsweetened chocolate over low heat, stirring continuously until smooth.
  3. 3
    Stir in cashews.
  4. 4
Drop by teaspoonfuls onto waxed paper lined cookie sheets.
  5. 5
Refrigerate 30 minutes or until set.
  6. 6
Store in a tightly covered container in refrigerator.

These are just too nummy. I made half a batch to save myself from myself. Thank goodness my daughter will eat them! I used lightly salted cashews, we love sweet/salty, and this is a keeper recipe...I'm thinking Holiday Gifts!

It took a weekend ice storm to get me to make these. I don't know why as they are easy to make. I grated my unsweetened chocolate bar and used a package of MiniChip Real Semi-Sweet Chocolate and put this into my heavy Calphalon saucepan. I had a 14 ounce container of cashews. After measuring out the 2 cups there was about 1/2 cup left in container. I feel I could have used the whole container as there was a lot of chocolate around the edge of the pan after mixing the cashews in. I spooned them onto my Cook-EZE non-stick liner and put them in the refrigerator. I left the house for two hours after I made these. Came home to a chocolaty treat they set up really nice. No need for a covered container as they will not make it through the day!!! Sharon thanks for a chocolate fix!! Finally made for Zaar Tag 2006 (due back in Nov 06)
