Carrot & Potato Soup

Carrot and potatoes go together surprisingly well. This soup testifies to that.

SERVES 8 (change servings and units)

Ingredients

Directions

    Saute onions& garlic in margarine until tender.
  2. 2
    Add chicken broth, carrots, potatoes, Italian seasoning and bay leaf.
  3. 3
    Simmer, uncovered, until vegetables are tender, about 20-25 minutes .
  4. 4
    Discard bay leaf and puree soup.
  5. 5
    Season with salt& pepper.

Excellent!!!!! Really good one soup. Taste so good. I omitted the bay leaves too but put more black pepper just because the family likes it. Great. Had made twice in the past week. Thanx for the recipe.

    Great! Family loved it. I added 10 oz. soft tofu to add some protein. Great "secret ingredient" for kids.

    So simple & so good. took minutes to make. The garlic is a must and I think bit of Coriander would be nice too - This could, I think, be a cold soup as well Loved it thanks Tebo for a delicious soup recipe

    Easy soup. Good way to get more carrots into your diet. Filling and healthy. My suggestion to make this recipe easier: Boil diced carrots and potatoes in small amount of water until tender, mash (e.g. w/ potato masher), and then add the chicken broth to your desired soup consistency. Alternative to pureeing in a blender.
