Low Fat Strawberry Ice Smoothie

Ingredients
- 2 tablespoons margarine
- 2 onions, chopped
- 1 clove garlic, minced (use more)
- 5 cups chicken broth
- 3 cups diced carrots
- 3 cups diced potatoes
- 1 teaspoon italian seasoning
- 1 bay leaf
- salt and pepper
Directions

Saute onions& garlic in margarine until tender.2
Add chicken broth, carrots, potatoes, Italian seasoning and bay leaf.3
Simmer, uncovered, until vegetables are tender, about 20-25 minutes .4
Discard bay leaf and puree soup.5
Season with salt& pepper.

Loved it as is and also played around with it a bit. I also tried it with herbes de provance which I prefer to Italian seasoning. I also increased garlic as I love it. I have also tried it with NO sautee and just everything thrown in the pan (reduce calories a bit). I have also tried it with a dollup of plain yoghurt and low fat sour cream to cream it up a bit. I prefer the yoghurt. Just a super and adaptable recipe

This soup reminded me of Thanksgiving dinner wrapped up in a soup (the carrots, the herbs, the potatoes...)! Delicious! Thanks!

So simple & so good. took minutes to make. The garlic is a must and I think bit of Coriander would be nice too - This could, I think, be a cold soup as well Loved it thanks Tebo for a delicious soup recipe

Easy soup. Good way to get more carrots into your diet. Filling and healthy. My suggestion to make this recipe easier: Boil diced carrots and potatoes in small amount of water until tender, mash (e.g. w/ potato masher), and then add the chicken broth to your desired soup consistency. Alternative to pureeing in a blender.
