Carrot Pancake

Recipe #184314 | 16 min | 8 min prep | add private note

By: New Mommy and Lovin' It
Sep 3, 2006

I always try to make meals as "healthy" as possible for my 1 and a half year old daughter. So, for breakfasts I've played around with ideas for pancakes. I decided to be adventurous and add carrots. Your first reaction might be "gross!" But it actually tastes rather good. My daughter loves them and eats them up.

SERVES 8 -10 (change servings and units)

Ingredients

Directions

  1. 1
In a bowl, mix together the dry ingredients [flour, sugar, b. powder, salt.].
  2. 2
Mix in the milk, egg, and applesauce.
  3. 3
Put raw, uncooked carrots in a food processor until very fine.
  4. 4
Stir the carrots in with the batter.
  5. 5
Spray your griddle or frying pan with cooking spray, then heat to 375 or medium heat.
  6. 6
Use 1/4 cup to measure out your pancakes. Cook pancakes until bubbly on top, then flip over until the other side is also cooked and golden.

These pancakes were great. They were moist and fluffy with no carrot taste. I used soymilk in place of milk and opted for the applesauce. Yum!

It wasn't all that tasty for me w/o syrup, but my 9,7, and 2 year old ate them eagerly... the picky little 2 year old did a little happy dance & said, "Oooh, yum, yum, yum." Thus, the 5 star rating.

I made one as intended, then added vanilla, cinnamon & raisins to the batter and cooked the rest that way, which I found tastier. This is a very moist pancake and tasty--especially for being so healthy. I used almond breeze for the milk & opted for applesauce instead of oil. I made a cream cheese spread for the topping made with 4 oz reduced fat cream cheese, 1/4 cup powdered sugar, 3 tbsp milk & 1 tsp vanilla. Yum!
