Caramelized Pecans (Raw Foods)

I found this in the newsletter from Nature's Pantry, my local health food store. They got it from goneraw.com. It is also used in Sweet Potato Casserole (Raw Foods) .

SERVES 1 -2 (change servings and units)

Ingredients

Directions

    Soak pecans overnight in 2 cups of water (6-12 hours).
  2. 2
    Drain and rinse.
  3. 3
    Spread the pecans on a dry towel and blot them dry.
  4. 4
    Toss with honey, vanilla, cinnamon, nutmeg, and sea salt.
  5. 5
    Marinate 30-60 minutes.
  6. 6
    Spread on dehydrator trays and dehydrate 12-20 hours or until dry.

    Store in an air-tight container in a cool, dry place.

Just took these off the dehydrator. So good warm. Thinking I will use some of them in salads!
