Caramel Popcorn (not too sweet or sticky)

I think this is a great caramel popcorn recipe, and I have tried quite a few! They were either too sticky or too sweet. This one is neither. The caramel dries well and doesn't stick to your fingers, and the sweetness is just right. I use spanish peanuts in this, but you could use other kinds of nuts, too. Here I was searching for the perfect caramel corn recipe, when all the while it was right in my recipe box! This is done in the microwave, and is very simple to make.

2 quarts (change servings and units)

    Prepare microwave popcorn as directed on bag.

    Remove any unpopped kernels.
  3. 3
    In 2 quart microwave-safe bowl, microwave butter on high until melted, about 1& 1/2 minutes.

    Stir in sugar and corn syrup, and microwave on high for 4-5 minutes.

    Stir in vanilla and baking soda until blended.
  6. 6
    Stir in popcorn, mixing well.
  7. 7
    (It may be a bit tricky to mix the popcorn in at first, but the more you stir, the easier it gets.) If you are using nuts, add them here too.

    Microwave on high for 4 to 6 minutes, stirring every 2 minutes to coat popcorn evenly.

    Transfer caramel corn to tray lined with waxed paper, or parchment paper.

    Cool and break popcorn apart.

    Store in airtight container.

I have made this a few times, and when I went looking for it again, I couldnt find it! I cannot believe I didnt rate it before. Its easy, it works, it tastes good !

    Really good! I scattered roasted peanuts on top of the popcorn before pouring the caramel. Fairly easy to mix and tastes like Cracker Jack. But what happened to my prize in the bottom of the bowl? I didn't get one. lol! Thanks for posting- ~Sue

    Man O Man, I wish I had not found this caramel corn. It is 10 star fabulous. Buttery tasting crunchy sweet and absolutely incredible. Also very fast to make. Light microwave popcorn worked really well here. Just be sure to pick out the kernels. At first I thought it may not be enough popcorn but it was just right. The first batch I made did turn into a horrible black mess 3 minutes into the second cooking so I will caution to watch this very closely the first time you make it. Since I had sampled some, I knew it was going to be great and just dumped that batch out to immediately make another. Cooking time for me was perfect at 4 minutes for syrup only, then 2 minutes for syrup plus popcorn, stirring after the first minute. Thanks ciao, this really is a wonderful recipe!

    This is quick, easy and tastes great! I like that it uses 1 micro. bag because that's what I usually have on hand. There was plenty of caramel to coat all the corn evenly and it crisped up nicely. One warning, know your microwave. Mine seems pretty powerful, so I used the lowest of the times listed. I almost, but not quite, burnt it in the last step. Store in an airtight container?!? Ha, there won't be any left!
