Caramel Apple Oven Pancake

This is an elegant twist on pancakes. It would be great for the holidays or brunch.

SERVES 4 (change servings and units)

    Preheat oven to 400 degrees. Spray 9-inch pie pan with non-stick spray.

    In small pan melt butter and add brown sugar. Cook until sugar melts, about 4 minutes, stir in cinnamon.

    Pour into prepared pan. Arrange apple slices evenly on top. set aside.

    Sift together flour, sugar, baking powder, baking soda, and salt. Add buttermilk and egg and whisk until blended. Stir in melted butter.

    Pour over apples covering evenly. Bake for 25 minutes or until golden brown on edges.

    Remove from oven and let sit for 10 minutes.

    Invert onto serving dish.

This is one of the most delicious things I have ever eaten! However, I would label it Caramel Apple Upside Down Cake since the batter is cake batter, not pancake batter (the batter is just like Pineapple Upside Down Cake). I used a cake pan instead of pie pan (based on a previous review) and am glad I did or the pancake would have been all over the oven. Thank you for this wonderful recipe! It will be a great way to use up all of the apples from the apple trees in my backyard.

    My 9 year old says this is a taste sensation! Easy enough for a beginner cook like I am, and used items I regularly keep around the house. The only thing I did differently was to use buttermilk powder,sifted with the flour. Such a pretty presentation too!

    This was fabulous. I loved how the caramel caramalized more in the oven making for some very tasty corner pieces. I cooked the apples in the brown sugar/butter mixture until it was soft before pouring it into the pan. So good! Thanks for posting the recipe.
