Capers make this a pequant dressing that doubles as a fine marinade for fish. Origins from France.

    Combine mustard, salt, peppr, and vinegar in a small bowl.

    Whiskk in olive oil until well blended.

I really wasn't sure about this one because of the amount of capers in it but it was wonderful. We just had it on some salad greens but will definitely be trying it on salmon on the bbq soon.

    I enjoyed this dressing on a Mediterranean-style salad. It went really well with all of the flavors, especially the kasseri cheese and kalamata olives. The flavor is very distinct. It would really make a great fish marinade - I'll have to try it! Thanks Sharon!

    This was a lovely vinargrette, we used it on a green salad, great crisp taste on the greens. Had about half left over so I used it to marinate steak tonight and then fried our mushrooms in the marinade, beautiful!! Will be using this again thanks for sharing!

    loved this dressing, but gotta have that garlic so I added in about 2 teaspoons fresh minced, I used seasoned salt and increased the capers (I love capers!) thanks for sharon Shar!
