Candy Apple Jelly

This is posted by request and I found it on recipegoldmine.com Also, I have no idea how much this will make-I'd boil a full rack of jars and work from there.

7 pints (change servings and units)

Ingredients

  • 7 cups apple juice
  • 1 cup red cinnamon candies
  • 8 cups white sugar

  • 1 (1 3/4 ounce) box sure-jell pectin
  • 1/2 teaspoon butter

Directions

  1. 1
    Measure apple juice and cinnamon candies into an 8 quart saucepan.
  2. 2
    Heat and stir to melt candies.
  3. 3
    Measure sugar into a separate bowl.
  4. 4
    Stir in fruit pectin into fruit juice in saucepan.
  5. 5
    Add butter.
  6. 6
    Bring to a boil (rolling) stirring constantly.
  7. 7
    Quickly stir in all sugar.
  8. 8
    Return to full rolling boil and boil EXACTLY 1 minute, stirring constantly.

    Remove from heat.
  10. 10
    Skim off foam and ladle into pint jars leaving 0.125 inch head space.

    Process in a boiling water bath for 5 minutes at altitudes up to 1000 feet.

well, I made this exactly as stated except i used liquid pectin and it didn't set.. I re-boiled it and put in another pkg. of liquid pectin and still didn't set like jelly should, but tastes great.

    OMG opened my last jar and went to find this recipe to make more and realized I hadn't left my review. This was is so darned good, and makes for wonderful gift basket giving also. I Love the candied apple taste, and reminds me of going to the fair where that is one of those absolute must haves. Thank you belatedly for the wonderful recipe.

    This makes the whole house smell so good you want to leave it cooking! Really easy, with an old fashioned Candy Apple taste. Can be made all year round. Will make this often!
