Calorie Wise Curried Cauliflower

Great taste for a calorie wise recipe. Use canned tomatoes if you like.

SERVES 2 (change servings and units)

Ingredients

Directions

    Steam the cauliflower for 5 minutes, reserve 1/2 cup of the water.

    Put the oil in a saucepan and add onion& garlic, saute until soft.
  3. 3
    Stir in the curry, ginger and salt (if using).
  4. 4
    Add tomatoes, bring to a simmer.
  5. 5
    Add cauliflower and 1/2 cup of cauliflower water.
  6. 6
    Cover and simmer for 3 minutes (longer if you want your veggies well done).
  7. 7
    Remove cover to allow some of the liquid to evaporate.
  8. 8
    Serve.

Yum, great flavor! I did use the salt and 1/2 can of diced tomatoes, and added a little extra curry. I also did not use as much water. Thanks Bergy!

    i think it was too watery. but it tasted nice and low calorie!maybe next time i'll use less water. this is a great dish for dieters. a healthier and lower calorie option to those thick fattening ones ccoked in coconut milk.

    For some reason, this came out VERY watery and bland for me... but I haven't given up on it, because I like the idea. Next time I think I'll add crushed red pepper and cumin, and use less water (or at least use a less juicy tomato!). Thank you for the great idea!

    I was looking for a recipe that might be like a dish that my neighbor from Calcutta taught me to make some 40 years ago (and I had mostly forgotten). I think that this was very close and it was fabulous; so it's a keeper. I think I also like it a little on the drier side, so recommend the lesser amount of water.
