These were WONDERFUL! I used Paula G's microwave poached eggs recipe and the absolutely amazing Low Fat Yogurt Hollandaise Sauce. If you haven't tried that hollondaise its better and easier than many traditional ones
The avocado worked perfectly with the eggs and sauce. Loved it.
