Calamari Salad

An excellent antipasto or summer lunch dish.

SERVES 5 (change servings and units)

Ingredients

Directions

    Blanche the squid circles in boiling water until the circles curl (30-60 seconds or exactly as long as it takes to say a Hail Mary).

    Drain and place the squid, onions and celery in a large bowl.
  3. 3
    Mix in remaining ingredients and toss.
  4. 4
    Chill for at least 1/2 hour before serving.

    Great... I used fresh lime juice and fresh clintro along with less oregano. Added a small amout of hot pepper! GREAT! There are many ways to change this up... A great recipe!

    This is a nice variation to one of my family's favorite antipasti. I use approx. 3 cloves of finely minced garlic and sometimes use octopus when I can find it. I only use lemon instead of vinegar and adjust it to taste. (I prefer it more tart).
