True Cajun heartland recipe.

SERVES 6 -8 , 2 pies (change servings and units)

    Peel and boil sweet potatoes until very tender.

    Preheat oven to 400°F.
  3. 3
    Mix all ingredients together and beat on high for 3 minutes.
  4. 4
    Fill each pie crust 3/4 of the way full. Bake for 40 minutes. Let cool so that it will thicken and become cuttable.

    Enjoy.
