Makes about 1/4 cup of rub.

SERVES 6 (change servings and units)

    Mix all ingredients except pork and store in an airtight container.

    Rub chops with rub.

    Prepare medium-hot fire and grill chops over indirect heat for 5-6 minutes on each side.

These have a wonderful kick and are so easy to put together. The chops were allowed to rest for about 10 minutes prior to placing on the grill. The amount of seasoning was perfect for the large cut chops used. Made for ZWT 5

    These were good. After making a couple of similar regional recipes this week I've decided I don't like thyme in cajun or caribbean recipes though, so from now on I'm going to leave it out. My DH thought these were a little too spicy for him but I dipped mine in a cool sour cream/ranch/honey mustard dip (my own concoction) and it tasted great like that! Only change I made was using pork tenderloin, cut into medallions instead of chops since I always worry about chops ending up tough. I think these would taste great with bbq sauce brushed on while cooking too, so I think next time I'll follow Leslie's lead and try that. Made for ZWT5.

    We loved these chops! They had just the right amount of spiciness to them. I did have quite bit of rub left over, so we mixed it in with a small touch of BBQ sauce and brushed it on while grilling. Delicious! Made for ZWT 5

    this was WONDERFUL. what a great combo of flavors. and a super easy weeknight dish, as others have said. I whipped it up in about 15 minutes tops on a dinner break. thanks for a keeper!!
