Cajun Deviled Eggs

SERVES 6 (change servings and units)

Ingredients

  • 6 large hard-cooked eggs, peeled
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon cajun seasoning or creole seasoning, divided
  • lettuce leaf
  • 2 tablespoons finely chopped parsley

Directions

  1. 1
    Slice eggs in half lengthwise.
  2. 2
    Transfer yolks to a bowl; add mayonnaise and Cajun seasoning; mix well.
  3. 3
    Pipe or spoon filling into egg whites.
  4. 4
    Cover and chill at least 30 minutes or up to 24 hours before serving.
  5. 5
    Place eggs on a lettuce-lined serving platter; sprinkle with parsley.

    Oh Charlotte, these are super-duper enjoyable! I halved the recipe I could of eaten the whole dozen half of eggs but decided against this. I made a Cajun seasoning based on Heart Healthy Shrimp Gumbo With Cajun Spice Mix; which, I served these with. These didn't need any adjustments at all for the ingredients, perfection plus here. The amount of mayo was abosutley perfect for 3 hard cooked eggs, (1 and 1/2 tablespoon) just enough the moisten the egg yolk. The use of fresh parsley was another wonderful addition, I dotted the tops with a bit of paprika and fresh thinly, sliced chives. Thank you, Charlotte! Made for Everyday is a Holiday March 2009.
