Cabbage and Potato Soup (Caldo Verde)

Traditional Portuguese soup, very good!! (The wine and food of Europe - Marc & Kim Millon)

SERVES 6 (change servings and units)

Ingredients

Directions

    Peel and cut up potatoes, and boil in salted water, with garlic.
  2. 2
    When soft, mash and add olive oil and cabbage or kale.
  3. 3
    Boil uncovered for about 3 minutes.
  4. 4
    Season to taste.
  5. 5
    Serve in bowls with a drop of olive oil in the bottom of each.

This was a delicious soup. I loved the way the garlic flavoured the potatoes. I had red cabbage to use up and am glad I came upon this recipe. We ended up adding salt to each bowl, I would probably add 1 or 2 tsp of salt to it next time. Thanks for the simple but yummy recipe!

    It has great potential. We thought it very bland, added garlic salt, onion powder more pepper and more salt. Thinking next time we will use chicken broth instead of water.

    I am Portuguese and this is truly delicious. Very "light" and tremendously good for you! I use the Kale when I make Caldo Verde! Thanks for posting this!

    Derf, this soup is super tasty! The potatoes and cabbage go so well together and the garlic adds a very nice flavour, too! I really like how simple and easy this is to put together and how much flavour you get from such few ingredients. I chose savoy cabbage instead of kale, cause thats what I had on hand and I thought it added a great taste. Due to this substitution I had to cook the cabbage with the potatoes and pureed the whole soup witha hand-held blender at the end. LOVELY! THANKS SO MUCH for sharing this wonderful recipe with us! Ill certainly make it often again this autumn/winter. Made and reviewed as a recipenap for Veggie Swap #15 Octobre 09.
