Here's a delicious reason to eat this nutrient rich vegetable! Serve this with rice.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat the oil in a large skillet.
  2. 2
    Add the mustard seeds.
  3. 3
    Lower the heat and cover the skillet while the seeds are popping.
  4. 4
    After the popping has stopped, add the cabbage.
  5. 5
    Stir well to coat.
  6. 6
    Cover and simmer 20 minutes.
  7. 7
    Add the turmeric, chili powder if desired, coconut and salt.
  8. 8
    Mix well.
  9. 9
    Cover and simmer 10 minutes more.
  10. 10
    Serve warm.

    Enjoy!

    Variation: To make Vegetable Toran, replace the cabbage with 6 cups frozen mixed vegetables.

So good! I was able to put this together really fast, too, by using my food processor to shred the cabbage. I had this for dinner with rice and thought it was a very satisfying meal. Thanks for sharing, Sharon!

    Oh my, this is delicious! I love cabbage anyway but the flavor here is surprisingly complex (admittedly, I generously doubled the spices). The coconut does not stand out a lot but I could taste it. I also used just 1 Tbsp oil for sauteing, and needed to add some water to simmer it. It's really easy to eat cabbage this way! Thanks!

    Wow! EVERYBODY loved this! I think the coconut got lost, tho. We loved the flavor. I used all the ingredients as suggested but only cooked it about 15 minutes total. A great dish! Thank you!
