Burgers Stuffed with Blue Cheese

Posted in response to a requested for stuffed burgers.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    In medium bowl stir together ground beef, 1/4 teaspoon salt and 1/4 teaspoon pepper; form into 8 large 1/4-inch thick patties.
  2. 2
    In small bowl stir together blue cheese, cream cheese and mustard.
  3. 3
    Place about 2 tablespoons cheese mixture on top of each of 4 patties.
  4. 4
    Top each with remaining meat patty; press around edges to seal.
  5. 5
    Place hamburgers in large skillet.
  6. 6
    Cook over medium heat, turning once, until desired doneness (about 12 minutes for medium).

    Place hamburgers on buns.
  8. 8
    In same skillet with drippings place mushrooms and onions, add 1/4 teaspoon salt, 1/4 teaspoon pepper and Worcestershire sauce.

    Cook over medium high heat, stirring occasionally, until tender (4 to 5 minutes).

    Meanwhile, place tomato slice on each hamburger, top with grilled mushrooms and onions.

These were fantastic! It went a lot quicker than I thought it would, which was good because by the time I got around to dinner we were starving. I added a bit more Worcestershire sauce to the onions and mushrooms. Thanks Lennie, this is a real winner, I can see these becoming a staple in our house!
