Buffalo Chicken Dip

I got this recipe from a respiratory therapist at the hospital where I work. He brought it to a party, and everyone asked for the recipe. I appreciate all the reviews that have been written about this recipe since I posted it so long ago. I see more and more that people are making it with freshly cooked chicken - great idea. I also like the idea of using rotisserie chicken. The original recipe used canned chicken for convenience, but I agree with all of you that the fresher meat tastes better. Barb P.S. 1 pie plate full (change servings and units)

Ingredients

  • 2 (8 ounce) packages cream cheese, softened

  • 1 (10 ounce) can chicken, drained (or equivalent rotisserie or freshly-cooked, chopped chicken)
  • 1 cup ranch dressing
  • 3/4 cup red hot sauce
  • shredded cheddar cheese, you decide how much
  • Frito corn chips, scoops

Directions

  1. 1
    Beat cream cheese, ranch dressing, and red hot sauce.
  2. 2
    Fold in shredded chicken.
  3. 3
    Spread mixture into pie plate sprayed with Pam.
  4. 4
    Bake at 350 degrees for 15 minutes.
  5. 5
    Add cheddar to top and bake an additional 10-15 minutes.
  6. 6
    Serve hot with Frito scoops.

    I made it while we were grilling out the other night, and everyone liked it. Once in awhile, I would bite into a piece of chicken and it had that from-the-can tuna taste, so I think it would be even better if you almost "marinated" the chunked chicken in the hot sauce for awhile before adding it into the dip. Other than that, load up on the cheese and enjoy this dee-lish dip!

    Great dip! I made this for my Super Bowl party and it was a huge hit with my guests! I used Larry's Hot Sauce (which is the hot sauce I use for my hot wings) and 2 chicken breasts instead of canned chicken. This recipe is a keeper! Thanks for sharing!
