Absolutely delicious. A big hit with hubby and son. I served this with blackened salmon using recipe 155056 for the rub, Easy Green Beans #143043, and some garlic bread. I did run this under the broiler for about 5 minutes after adding the Parmesan. Great recipe that we will have again and again. Love the bruschetta flavor! Thank you, homegirl.

Very fresh tasting and easy to do. Good if you need something fast and not too heavy. My only problem was that there wasn't really a sauce and it made it hard to get the veggies and noodles combined well. BF added a bit of pesto to the leftovers the next day and that worked very well. I think I still prefer traditional bruschetta, baked on bread but this was a good way to switch it up. Thanks for sharing!
