Bruschetta Chicken Bake

This is an easy recipe when you need dinner fast!

SERVES 6 (change servings and units)

    Preheat oven to 400°F.

    Place tomatoes with liquid in medium bowl.
  3. 3
    Add garlic, stuffing mix and water; stir just until stuffing mix is moistened.

    Set aside.

    Place chicken in 13x9-inch baking dish; sprinkle with basil and cheese.

    Top with stuffing mixture.

    Bake 30 minutes or until chicken is cooked through.

This was definitely easy to make, but I found it dry, not very tomato-tasting, with not enough cheese. I added almost 1 c. more cheese on the top, and I had a partial jar of tomato and basil pizza sauce in the fridge, which I ended up pouring in the casserole, just to make it more moist. I did think it was nice how the chicken didn't have to be pre-cooked. I didn't spray my casserole dish, and it was fine. If I make this again, I might add an 8 oz. can of tomato sauce. It was good though, and it's a good fall dish.

    Quick and easy dinner. I think my family would have rated this higher except we have had a very similar recipe that they enjoy more. The bottom stuck to the dish in places so I think if I made it again I would spray the pan with Pam first.

    I baked this for the first time yesterday and I love this recipe! I added some thawed chopped spinach to get an extra serving of veggies in there. Easy, inexpensive, and just delicious! I've shared it with my coworkers.

    I just saw this in the Kraft Foods magazine and it looked wonderful so I had to try it for myself. It was wonderful! I didn't have mozzarella on had so I used half mild cheddar and half low fat cheddar. I did double the cheese. Thanks lilkittykt.
