Brown Sugar Meatloaf

Recipe #38641 | 1½ hours | 20 min prep | add private note

By: yooper

Got this one from the www.allrecipes.com website. It's one of their most popular recipes. I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar. A lighter version can be made using Splenda brown sugar blend, skim milk, and Egg Beaters.

So the first time I made this, I accidentally got 80/20 ground beef, which made this turn out super greasy; good, but greasy. But the second time we made this, AMAZING!!! I added 3/4 tsp sweet paprika and 1/4 tsp garlic powder to the meat mix and put the brown sugar and ketchup on the top. The sugar melted down and infused the meatloaf with it's sweet goodness. Though I think I'll be using just a tad bit less sugar next time, the leftovers were almost sickly sweet. BF loved them, but it was a bit much for me. Other than that, definitely 5 stars!

This meatloaf is wonderful! The best I've ever made and will now be the offical meatloaf recipe in our home. I used chili sauce and 1/4 cup of sugar and it was perfect for us! When mixing I thought it was much too wet and might not turn out, but it was delicious and held together nicely! Great recipe - thanks for posting!

Yooper, this was truly wonderful, moist, very good tasting, meaty (not too much filler), held-together beautifully, even when sliced hot, now that’s a good meatloaf! I knew that ½ cup packed brown sugar was way too much sugar for us with ½ cup ketchup, as we don’t like meat too sweet. So I tried 1/8 cup packed brown sugar, tasted it and it was just right for us. Would not change a thing in the ingredients other than the brown sugar/catsup ratio. Because my oven tends to burn on the bottom I put the catsup/brown sugar mixture all over the top of the meatloaf and that worked great. And thank-you Yooper for suggesting this recipe in my recipe request, I was looking forward to making it and we all really enjoyed it and Will be making it again!

This was the best Meatloaf I put everything together the night before and put in a glass pan. The next day when I got out of work just had to pop in the oven while I made some mashed potatoes. I also used the chili sauce and I think that is the best combination with the brown sugar. I had to bake a little more than 1 hour. Had only one piece left. Thanks for Posting !!
