Broccoli or Cauliflower with a Soy-Lemon Dressing

This is another great, easy, tasty, healthy recipe that I adapted from A Spoonful of Ginger by Nina Simonds.

SERVES 6 (change servings and units)

Ingredients

Soy-Lemon Dressing

Directions

    Using a sharp paring knife, peel the tough skin from the broccoli stems and cut away the stem ends.
  2. 2
    Cut off the florets and cut the peeled stems on the diagonal into 1 1/2-inch thick sections.
  3. 3
    Separate the larger florets so that all are approximately the same size.
  4. 4
    If cooking cauliflower, remove any leaves and break or cut into florets, about 1 1/2 inches wide.

    Arrange the broccoli or cauliflower in a steamer tray, or on a plate set on a rack.
  6. 6
    Fill a wok or pot with several inches of water and heat to boiling.
  7. 7
    Place the vegetable over the boiling water and steam 6-8 minutes, or until tender.

    I like my veggies crisp tender so I steam mine just a few minutes.

    Steam them till they're the way you like, check after 3-4 minutes.

    Drain any water from the broccoli or cauliflower.
  11. 11
    Put the vegetable in a serving bowl, add the dressing, toss lightly and serve.

This is good stuff! I added a bit more sugar to balance the lemon and soy sauce out to my taste and a little fresh ginger on the side. Love the tanginess that this sauce gives to the cauliflower especially!!! We really liked these vegetables, will make again, thanks!!

    I tried this recipe with all cauliflower and thought that the flavor of the dressing was a bit strong for the cauliflower. I would try this again with broccoli because it was very easy to do and can be served hot or cold.

    This was really good! I used all broccoli, steamed in a saucepan. Then I removed the water and put everything together in the saucepan to warm the dressing and melt the sugar. Yummy, thanks!

    The flavors of this didn't balance as much as I had hoped. There was a bit too much "tang" - (too much lemon?). It was really easy to put together.
