Broccoli and Tortellini Salad

You can lighten this recipe up a little by using turkey bacon, & low-fat mayo. From allrecipes.com

    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. 2
    Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water for 8 to 10 minutes or until al dente. Drain, and rinse under cold water.

    In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.
  4. 4
    In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and red onion. Pour dressing over salad, and toss.

We had a big crowd at my house this weekend and I wanted to make some type of a veggie salad to go with my ribs and potato salad, and this was it! Very tasty indeed! I loved the tortellini added, and with craisins substituting the raisins it was terrific!

    I've made this before without the tortellini. But this is the only way I'll make this from now on. I used currants instead of raisins and didn't have sunflower seeds. It still turned out great! Will make again! Thanks.

    I made this up for my DS in a take-home pac, he loved it! this is a really great salad, I doubled the recipe, and also added in a pinch of garlic powder and some black pepper to the mayo mixture, thanks for sharing CD!...Kitten

    This was pretty good, but I messed up and forgot to get some ingredients at the store. I omitted the raisins and sunflower seeds this is what I forgot. I think it would have been much better with those ingredients. The flavor is good otherwise and I will make again with the correct stuff added. Thanks for the great recipe.
