Broccoli and Carrots in Creamy Parmesan Sauce

From BC Simple Winter Meals. Cheesy, but not the usual cheddar sauce.

SERVES 4 (change servings and units)

Ingredients

Creamy Parmesan Sauce

Directions

    Place broccoli and carrots in 1 inch of water in a saucepan and bring to a boil.
  2. 2
    Boil 5-7 minutes or until vegetables are crisp-tender or done to your liking. Drain and keep warm.
  3. 3
    While vegetables are cooking, combine cream cheese, parmesan, milk, butter, garlic in a small saucepan over medium heat. Cook mixture, stirring constantly, until cheese melts and mixture is smooth, hot and creamy. Do not boil cheese sauce.

    Season with salt and pepper to your taste.
  5. 5
    Plate hot vegetables and cover with cheese sauce.
  6. 6
    Sprinkle with snipped chives.

    Loved this sauce! It's almost like a thick alfredo sauce and it goes VERY well with this veggie combination. When my hubby comments on vegetables, I know it's THAT good. We thought it was a great change from the usual cheddar-based sauces. I think this would go well with cauliflower in the mix, too. I'll be trying that. Thanx for a great new veggie dish!

    Oh, but this was good! Even hubby, who dislikes broccoli, enjoyed this veggie side. Don't care for baby carrots so used regular sliced ones. I'm putting this one in my book of must do again-and again. Made for January Recipe Swap.

    I made a double batch of sauce and mixed one with just the broccoli and carrots and one with broccoli and cauliflower. Both were great, I did end up doubling the cheese on the broccoli and cauliflower - I think the combo of the Broccoli and Cauliflower overpowered the cheese.
