Broccoli With Sweet Onion Vinaigrette

This quick and easy recipe comes from the Renees Dressing that is used in the salad....I've modified it slightly. It is absolutely delicious....sweet and tangy and refreshing...and the colour of it is beautiful. You should prepare it just before serving, which may be it's only setback, but it doesn't take long. I hope you enjoy it!

SERVES 4 (change servings and units)

Ingredients

  • 1/4-1/2 cup sweet onion vinaigrette dressing (I use Renees Naturally Light Sweet Onion Vinaigrette)
  • 2 cups broccoli florets (or a combo of broccoli/cauliflower)
  • 1 can mandarin orange, drained (reserve the juice for another purpose if you'd like...I always add mine to chicken stirfry)
  • 1/2 cup finely diced sweet onion (vidalia's are the best!!)
  • 1 red pepper, cut in thin strips
  • crumble feta cheese (optional)

Directions

    Steam broccoli about 3 minutes (you want it to be slightly crunchy).

    Drain and rinse with cold water.

    Place broccoli, orange segments, onion and pepper in a bowl.

    Toss with vinaigrette and serve.

A real keeper. I didn't steam, just chopped and mixed. Like the crunchiness. Used a semi-sweet Onion Viagigrette and a sliced purple onion. Yummo! Made for CameraLess Chefs in Cooking Photos.

    What a colorful dish this makes! I was a bit skeptical about oranges and red peppers in the same salad, but it works really well. Great recipe - we'll sure be having this again. Thanks so much for sharing.

    TERRIFIC! I used our favorite dressing (Rainwater Dressing #90454), raw veggies and the optional feta. We're going to have this beautiful, delicious, healthful salad often. Thanks, Love2Eat.

    I prepared this for a salad buffet and really liked the color contrast of the ingredients. I doubled the ingredients, except used 1/2 broccoli and 1/2 cauliflower. I didn't steam the broccoli and cauliflower, as I prefer very crunchy veggies. I also omitted the feta. My red pepper had a bit more bite than usual, but that contrasted nicely with the sweetness of the dressing and mandarin oranges. This recipe will be a repeat during the summer months. :~D
