Broccoli Roasted With Garlic, Chipotle Peppers and Pine Nuts

This is so easy and full of great flavor from the broccoli being roasted with garlic spiciness and smokiness from the chipotles and creaminess from the pine nuts. Keep in mind if you don't use seasoned salt and use regular salt you don't need so much.

SERVES 10 (change servings and units)

Ingredients

Directions

    Preheat oven to 450 degrees.

    Place the broccoli in a roasting pan so all will be 1 layer. Mix all the remaining ingredients together then pour over the broccoli.

    Place in oven for 10 minutes. Toss and return to oven for 10 more minutes give an other toss for 5 -10 more minutes.

    Enjoy!

Delish! This is quite a treat compared to our usual plain steamed broccoli. The seasonings were just right; spicy but not over bearing. This is the first time I have roasted broccoli and it came out perfect- the timing was right on. The pine nus are wonderful and give it a smooth nutty taste. I made this for the vegetarian/ vegan recipe swap. Thanks for posting, I would make this again for sure!

    Yum!! Great flavor, loved it. I used the pre-cut broccoli florets in the produce section, and subbed a dash of red pepper flakes for the chipotle peppers. Definitely my favorite way to eat broccoli!!

    This was a wonderfully different twist on broccoli (which happens to be my favorite vegetable). It was easy to make and just bursting with flavor. Loved it!
