Broccoli, Raisin, Pasta Salad

This is GOOD! A nice LOW FAT salad that will help you get those veggies into your diet! This is NOT an overly sweet salad, but the raisins and sweet red bell pepper help to balance the tart vinegar. This is a favorite of mine and I hope you enjoy it too! This comes from the Sun-Maid Raisin folks!

SERVES 4 (change servings and units)

DRESSING

Directions

  1. 1
    Combine all salad ingredients well.
  2. 2
    Combine all dressing ingredients well and, pour dressing over salad.
  3. 3
    Toss all together, mixing well and add salt and pepper to taste.

A great, simple salad! I played with the dressing a bit, adding about a tsp of sugar, 1/2 tsp. oregano and about 1/4 tsp. chopped shallot. I added pumpkin seeds, too. I'm looking forward to eating this for lunches all week!

    This is a pasta salad that even my husband loves! I usually make a double recipe for get togethers and use craisins instead of raisins. It has a wonderful, fresh taste and is simple to make PLUS it goes with a lot of different things. Thank you for posting. Simply wonderful!!!

    You are so right, Theresa, this is GOOD stuff! Not only do I love the healthy aspect of this, but it's so delicious with all the different flavors hanging out together in one dish. I used whole wheat rotini pasta and fat-free mayo. All of the fresh colors really produce an appealing looking dish too. Thanks so much! MERP'd for All New Zaar Cookbook tag.

    This is a great pasta salad and will certainly make it again. I liked the addition of the raisins and red onion.
