Broccoli-Potato Casserole

A perfect mix of potatoes and broccoli. I used cream of mushroom soup to make a slight change in taste, which amazingly worked well for the recipe.

SERVES 8 (change servings and units)

Ingredients

Directions

    Cook potatoes until tender and mash them.
  2. 2
    Cook broccoli until tender.
  3. 3
    Dot casserole dish with butter or mushroom.
  4. 4
    Add broccoli.
  5. 5
    Top the broccoli with the mushroom soup and grated cheese.
  6. 6
    Add the mashed potatoes on top.
  7. 7
    Sprinkle with salt, pepper, paprika, and garlic powder.
  8. 8
    Bake in a 350° F oven for 30 minutes.

YUMMY! I liked it and Hubby LOVED it. It has 3 of his favorite things in it - mashed potatoes, broccoli and cheese! Very easy to throw together. Thanks for posting this keeper! (Hubby said he's willing to make it himself next time!)

    Good, easy, and economical. I used leftover cold mashed potatoes so it was super easy, and the timing was still 30 minutes. Thanks for sharing Studentchef. Made for POTLUCK TAG Game.

    We loved this potato casserole! I boiled the potatoes and mashed them with margarine and skim milk like I always do. Used a 16 ounce bag of frozen cut broccoli and monterey jack and colby cheese mix. Very neat to have the broccoli and cheese along with the mashed potatoes in one dish! One of the reviewers mentioned it is hard to not eat everything at one setting, it is true! Thank you Studentchef for a wonderful side dish!

    Made this exactly as directed (using mozarella cheese). It wasn't bad (nothing wrong with it per say), but I wasn't overly impressed either. Very easy and seemed like it should have been serious comfort food, but as I was eating it I was thinking that I would have been just as happy with a side of broccoli & cheese and a side of and garlic mashed potatoes and gotten dinner on the table a half hour sooner. Sorry.
