Broccoli Chicken Dijon (south Beach Diet)

This recipe comes from krafthealthyliving.com. I haven't tried it yet, but it looks wonderful! As soon as I get a chance to make this dish, I'll let you all know how it is.

SERVES 4 (change servings and units)

Ingredients

Directions

    Mix chicken broth and soy sauce; set aside.
  2. 2
    Cook and stir broccoli and garlic in hot oil in large skillet on medium-high heat until crisp-tender.

    Remove from skillet; cover to keep warm.
  4. 4
    Add chicken to skillet; cook and stir 3 to 4 minutes or until cooked through.
  5. 5
    Add broth mixture; mix well.
  6. 6
    Bring to boil.
  7. 7
    Reduce heat to medium-low.
  8. 8
    Stir in mustard until well blended.
  9. 9
    Return broccoli mixture to skillet; mix lightly.

    Cook until heated through, stirring occasionally.

Awesome, very, very tasty and South Beach friendly! What more could I ask for? Made this as written and wouldn't change a thing. Thanks for a great recipe that will become a regular at our house!

    This was very good but a little on the salty side for me, but nothing you can't fix with less broth or less soy sauce. Definitively a keeper!

    Excellent recipe! This recipe recieved rave reviews in my home. The only things I changed are that I added a bit more garlic, and because I was afraid that the garlic would scorch before the broccoli was cooked enough for me, I added a couple of tbs. of water and covered to let it steam for a couple minutes before removing from the skillet. Will definitely be cooking this regularly!

    Excellent! I cooked the broccoli in the microwave just a couple of minutes before sauteeing just to tenderize it a little. Other than that, we loved it! I've been on South Beach for a week now, and this will be one of our favorites. Thanks Mindi for a keeper!
