Broccoli Chicken Dijon (south Beach Diet)

This recipe comes from krafthealthyliving.com. I haven't tried it yet, but it looks wonderful! As soon as I get a chance to make this dish, I'll let you all know how it is.

SERVES 4 (change servings and units)

Ingredients

Directions

    Mix chicken broth and soy sauce; set aside.
  2. 2
    Cook and stir broccoli and garlic in hot oil in large skillet on medium-high heat until crisp-tender.

    Remove from skillet; cover to keep warm.
  4. 4
    Add chicken to skillet; cook and stir 3 to 4 minutes or until cooked through.
  5. 5
    Add broth mixture; mix well.
  6. 6
    Bring to boil.
  7. 7
    Reduce heat to medium-low.
  8. 8
    Stir in mustard until well blended.
  9. 9
    Return broccoli mixture to skillet; mix lightly.

    Cook until heated through, stirring occasionally.

Shhh...don't tell my husband this was good for him. Delicious! I used 1/3 cup Dijon instead of 2 tablespoons, which was perfect. Also dissolved a little cornstarch (maybe 1 tsp.) in water and stirred in at the end to thicken the sauce just a bit. Definitely a keeper.

    This was great!! I didn't change much, but I did find I needed to add more oil to cook the chicken. I think this would work better (with less oil) if you steamed the broccoli a bit first. It would even work with frozen broccoli. Excellent recipe. Thanks Mindi.

    Excellent recipe! This recipe recieved rave reviews in my home. The only things I changed are that I added a bit more garlic, and because I was afraid that the garlic would scorch before the broccoli was cooked enough for me, I added a couple of tbs. of water and covered to let it steam for a couple minutes before removing from the skillet. Will definitely be cooking this regularly!
