Broccoli & Cheese Soup

A great soup, one of the deli classics.

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
    Saute onion and celery in butter in saucepan over medium heat until tender.
  2. 2
    Add flour, and salt and pepper, cooking and stirring until mixture is smooth and bubbly.
  3. 3
    Add broth and milk (all at once), stirring constantly until mixture comes to a boil and begins to thicken.
  4. 4
    Add cooked broccoli (I like to steam mine then cool in cold water to preserve color), stirring until all is heated through.
  5. 5
    Remove from heat and stir in cheese until melted and smooth (place back on heat briefly if necessary).

Just made this tonight, and it was a big hit in our little family! I love broccoli & cheese soup, but even my "anti-trees" husband finished his bowl. I reduced the milk and upped the stock, in order to cut a few calories and up the flavor. I had leftover ham, so added that and floated sea salt croutons on top. Mmmmm. There's enough left for a couple of tasty lunches!

    I thought that it was a little rich for me, but the rest of the family enjoyed the soup. I did use a can of evaporated milk and topped the rest off with non fat milk and used a 6 year old aged cheddar for the cheese component. Thanks for posting an extremely quick soup to make.

    Woweee!!!! This was SO, SO, SO good!!!! I have been wanting a good recipe for this soup and my search is over! Sue, I never heard of steaming the broccoli first but it sure did preserve the BRIGHT green of the broccoli and made it look so much more appetizing than the gray-green color it fades to after extended cooking. I followed the recipe exactly except for the addition of about 1/4 c. of diced ham that I needed to use up. Next time I will double the recipe!

    Wonderful! A top 10 for comfort food.This recipe is simple and easy to follow. I doubled it,added 2T of worcestershire(at the end)& used SHARP wisconsin cheddar and served the soup in crusty bread bowls...my kids ate it up!
