Broccoli Cheese Casserole

This recipe allows you to tailor your dish for the amount of time and availability of ingredients. This can be prepared two ways, with fresh or frozen broccoli, with cooked rice or uncooked minute rice, or with Cheese Whiz or colby cheese.

SERVES 6 (change servings and units)

Ingredients

  • 1 (10 ounce) box frozen chopped broccoli or 1 head fresh broccoli

  • 1/4 cup chopped celery (optional)
  • 1 cup diced onion (optional)

  • 1 (8 ounce) jar Cheese Whiz or 1 cup shredded colby cheese

  • 1 (10 ounce) can cream of chicken soup or cream of mushroom soup or cream of celery soup
  • 3/4 cup milk
  • 1 cup instant rice, uncooked or 2 cups cooked rice
  • salt and pepper

Directions

  1. 1
    If using fresh broccoli cook broccoli to desired tenderness. Sauté celery and onion in a bit of butter if desired. If using cooked rice, prepare rice. This can all be done ahead of time.

    Mix all ingredients and pour into a greased 2 quart casserole with a lid (or cover with foil).

    Sprinkle additional cheese on top.
  4. 4
    Bake covered at 350ºF for 45 minutes if using uncooked minute rice, if using cooked rice bake until warm through and cheese is bubbly.

We thought this was great! I doubled the recipe and used 1 can of cream of chicken and 1 can of cream of garlic mushroom. I also used brown minute rice and nonfat cheese. Very tasty!

    Outstanding recipe ! Although I made a few changes ( I find it hard to leave a good recipe alone) I really don't think these changes had a major impact on the outcome. First of all I used more broccoli (large kilo bag of frozen), about 1 cup of celery, cream of celery soup and omitted the rice completely (didn't have any). The rice was not missed as this turned out great...people were fighting over the second and third helpings! I've already got a request for this dish for Christmas! Thanks so much, MommyMakes....I know that this will be a staple in my keeper file!

    So comforting and delicious! I used 1 -16oz. bag trader joes frozen brocolli, 1 cup shredded cheddar, 2 cups cooked brown jasmine rice, sauted 1/2 cup onion and 2 cloves garlic and used cream of chicken soup and the 3/4 cup milk as noted. I didn't have any celery but will try next time. Thank you MommyMakes for a top notch recipe. I will also try other combinations of flavors because this is relatively healthy, easy and inexpensive!

    Very easy to prepare and tasted great. I didn't have any celery and made do with cubed Velveeta, but it still tasted terrific. Will make again..with the right ingredients next time. Thanks for an easy week night side.
