Broccoli Casserole

A delicious combination of broccoli, cheese and rice that is sure to please everyone. My mother has made it for years and we all love it, especially my 4 year old. This goes great with ham, chicken or pork, and is a nice change from a boring vegetable, or the ever-so-popular macaroni and cheese. I hope you like it as much as we do.

SERVES 6 (change servings and units)

Ingredients

  • 10 ounces frozen chopped broccoli
  • 1/4 cup butter
  • 1 small onion, chopped

  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1/2 cup milk
  • 1 cup Minute Rice
  • 4-5 slices American cheese (cut into several small pieces)

Directions

  1. 1
    Preheat oven to 350. Cook broccoli according to package directions, in a casserole dish. Add remaining ingredients, and stir well. Bake for 15 minutes. Stir well and bake 30 minutes longer.
