Broccoli Cashew Salad

I love broccoli salads and with the addition of cashews, this is lovely! Adapted from Cooks.com.

SERVES 8 (change servings and units)

Ingredients

Directions

    Wash broccoli thoroughly, drain. Cut into bite-size flowerets.
  2. 2
    Combine mayonnaise, sugar and vinegar, stirring until well blended.
  3. 3
    Combine broccoli, bacon bits, onion and raisins in large bowl. Toss with mayonnaise dressing. Chill for several hours or overnight. Stir in cashews before serving. Enjoy! 6 to 8 servings.

    This sounds great! I'm going to whip it up for the 4th of July party I'm headed to. I think I will blanch the broccoli as kittencal did, and will add some shredded cheese. Mmmm! Can't wait!

    very good, I lightly blanched the broccoli florets, I only used 1/4 cup of sugar and that was plenty, and also added in 1/2 teaspoon garlic powder to the mayo mixture, we enjoyed this great salad Sharon, thanks for posting!

    This was pretty good! I followed the recipe in exception to halving the amount of mayonnaise (I use Fat Free Hellman's), used 1 tablespoon vinegar, and used real bacon. I love this salad at Sweet Tomatoes and glad I can now satisfy my craving at home! I would recommend chopping the onions as finely as possible.
