Bringing Home Baby Carrots

This clipping I found in a taste of home magazine, it was for a baby coming home theme. I tried them the other night and they were great!

SERVES 4 (change servings and units)

Ingredients

  • 1 (16 ounce) package fresh baby carrots

  • 1 cup apple juice
  • 3/4 cup water
  • 1/3 cup honey

Directions

  1. 1
    In a large saucepan, combine all ingredients.
  2. 2
    Bring to a boil.
  3. 3
    Reduce heat; cover and simmer for 10-14 minutes or until carrots are tender.

    Serve with a slotted spoon.

I saw this in TOH too and thought the kids would really like it but we all thought they were too sweet. I would try again and reduce the apple juice and honey ratio to suit my family`s tastes better.

    these are really good... this is the only way we ate carrots as kids, but we added cinnamon! yum!

    These are great. I am not fond of glazed carrots because they are usually too sweet for my taste. These carrots have a nice hint of sweetness. I divided the recipe to serve 2 and only used the apple juice to cook the carrots. Thanks for sharing this nice and easy recipe.
