Breakfast in a Pan Frittata

Not knowing what to fix for breakfast can be a real chore. This was the result of "I'm tired of the same old thing". Served this with homemade biscuits and sliced tomatoes. Makes two generous servings.
SERVES 2
Ingredients
- 1-2 tablespoon olive oil
- 1 medium red skin white potato, washed
- 1/2 medium red bell pepper, diced
- 3-4 green onions, washed and sliced
- 1/2 cup sliced mushrooms
- 3 slices Canadian bacon, diced
- 1 cup egg substitute, beaten with or 4 eggs, beaten with
- 1/4 cup milk
- 1/4 cup shredded mozzarella cheese
- salt and pepper
Directions

Using medium shredder blade of food processor, shred the potato.2
Warm olive oil in non-stick skillet, add potato, bell pepper, green onions, mushrooms and bacon.3
Cook and stir until potato is lightly browned and other vegetables are crisp tender.4
Add salt and pepper to taste, pour egg mixture over vegetables.5
Cook until eggs are almost set, running spatula around edges and allowing uncooked egg to run to bottom of pan.6
When eggs are almost set, invert onto a dinner plate and then slip back into pan allowing the bottom to cook completely.7
The last few minutes top with shredded cheese and cover until cheese melts.8
Cut in half and slip onto serving plates.

Love the options with this frittata. Good way to use up left-over veggies; I used red pepper, red onion, potato, deli ham and white cheddar cheese. Great Sunday morning breakfast! Thanks Paula for sharing. Made for ZWAT 4.

I made this for brunch this morning....I had a bad, bad hang-over and really needed something decent to eat 
....After stumbling around the kitchen gathering the ingredients I managed to cook this very yummy frittata. I made to the recipe...except I used Australian bacon and I used 1/2 cheddar and 1/2 mozzarella. There was no way I was going to flip it...I put it under the grill/broiler.. Served,cut into wedges,with toast and strong black coffee.

This was just excellent Paula. Wonderful flavor without the Canadian bacon (didn't have any) A little tricky on the flipping, but I managed it with much surprise. thanks.
