Chicagoland Chef du Jour

By: Chicagoland Chef du Jour
Feb 13, 2008

This will serve allot of people. I go the original recipe from a coworker back in th late 70's. My family always requests this when we have holiday brunches. *Assemble the night before. I assemble in a large foil roasting pan. It will likely serve more than 12 people, depending on how large the sliced squares are.

SERVES 12 -14 (change servings and units)

Ingredients

  • 12 ounces sharp cheddar cheese, grated
  • 1 lb bacon, cooked and crumbled
  • 16 slices white bread, butter top sandwich bread, crusts removed
  • 8 extra large eggs, beaten
  • 3 cups milk, any type
  • 1/2 teaspoon dry mustard
  • 1/2 cup butter, softened
  • 1 cup butter, softened
  • 2 cups potato chips, crushed, set aside until ready to bake

Directions

  1. 1
    Preheat oven to 350°.
  2. 2
    Assemble the night before!
  3. 3
Grease pan with a light coat of butter.
  4. 4
Trim the crusts off the bread slices. Butter on one side of bread.
  5. 5
Place buttered slices of bread, **butter side up, on the bottom of the baking dish.
  6. 6
Sprinkle with all the bacon and cheese.
  7. 7
Top with layer of buttered bread slices, butter side up.
  8. 8
Beat eggs, milk and mustard together.
  9. 9
Pour over bread, gently press slices into the egg mixture to coat. Cover with foil and refrigerate overnight.
  10. 10
    Preheat oven to 350°.
  11. 11
One hour before baking, remove from fridge and bring to room temperature. This will cut down on the baking time.
  12. 12
Bake COVERED for 40 minutes. After 40 minutes remove foil.
  13. 13
Continue baking for approximately 10-15 minutes until center is done and top is lightly browned.
  14. 14
Top with crushed potato chips, bake for an additional 5 minutes.
  15. 15
Let stand for 5-10 minutes before slicing into squares.
