Brazilian Rice

We love rice and this rice came from a friend who keeps a container of it in her fridge. She serves it with every meal.

SERVES 4 , 4 servings (change servings and units)

Ingredients

Directions

    Wash and drain rice.
  2. 2
    Set aside.
  3. 3
    Saute onion and garlic in olive oil until soft.
  4. 4
    Add tomatoes, rice, salt, pepper and water or broth.
  5. 5
    Bring to a boil.
  6. 6
    Bring heat to medium.
  7. 7
    Cook until all bubbles on surface have disappeared.
  8. 8
    Cover and cook on low heat for 20 minutes.

This was very good! It needed a touch more liquid, and time, but other than that I prepared it as the recipe states and was glad I did!     If you like this, you should try it the way my mother used to make. Just use lots of onions, diced. Stir fry them until they are transparent and follow the rest of the recipe. I used to be the first to dig in, since I love the onions that float to the top! Brings back childhood memories...

    I did this in my rice cooker so just threw everything in and used vegie stock. This was nice but the flavour is really mild & I would have liked it a bit more intense, I would probably add a little more garlic and use chicken stock for more flavour if I was to make this again. Made for ZWT 4.
